Ans.:

  1. Take Garlic, peel it, wash well. Dry them with a towel. Dry them under sun for a whole day.
  2. Make spice mix, by roasting fenugreek, fennel seeds and mustard, dry red chillies. Blend them coarsely in a blender.
  3. Now take the peeled Garlic in a bowl. Add in the spice mix, salt and mix well with cold pressed Sesame oil. And put it in sun for it sun-dry. Store this in sterlized dry jar.

Ans.: Pickled garlic is garlic stored in vinegar whereas garlic pickle is made in sesame and various spices along with jiggery to give it sweet and sour taste

Ans.: Yes, you can use minced garlic in pickles. At “The Little Farm” we use desi garlic which is small in size. If we use minced garlic in garlic pickles then it will be chutney not pickle.

Qs.21: What oil do you use in your garlic pickle and why?

Ans.: At “The Little Farm Co” we use Cold Pressed Sesame Oil. It has powerful antimicrobial, antibacterial and antifungal properties. This prevents the formation of any mould or bacterial growth in the pickles. It also forms a layer of protection between air and pickles from the bacteria present in the air. At “The Little Farm Co” we grow our own Sesame seeds and then further cold press it to get cold pressed Sesame oil. It is purely organic and lab tested. We do not infuse it with palm oil or any other oils. And this cold pressed Sesame oil is used in our pickles.
